Pinterest Projects Week 15

Happy tax day everyone!  Ha!

You guys, I had to scrape my windows this morning.  What?!?  It would have been really depressing had the sun not been shining.  It snowed yesterday and actually stuck to the ground by the end of the day.  Bleh.

I didn’t feel good last week, so I didn’t do much of anything.  But Saturday morning I watched Heartland Table over on The Food Network and got inspired.  She was making a good ole fashioned supper club meal.  The hubby and I followed suit and had yummy rib eye steaks, made-from-scratch hashbrowns and corn.  Oh, how yummy it was!

Pinterest Projects Week 2

All of my Pinterest projects this week were recipes.  It was just one of those weeks.  So, get ready to want to eat.  Seriously, go put on sweatpants and then come back.

There you have it, ladies and gents.  A round up of this weeks yummy Pinterest projects!  I think my favorite was the quinoa burger, followed by the crispy cheddar chicken.  My least favorite was the bacon beer cheese soup.  It had too much beer flavor.  And if you know me, I DO NOT like beer.  I don’t think I even finished my bowl.

But enough about me, you must be starving!

Ooey Gooey

I found a delicious recipe on Pinterest for these yummy little cookies.  The original post is here.  I didn’t change anything from the recipe, except I didn’t have baking powder.  So I combined 1 teaspoon of cream of tartar with 1/2 teaspoon of baking soda.  And used 1 teaspoon of the mixture for the baking powder.

The dough for this was delicious!  I may try the dough in homemade ice cream.  I’ll let you know how it turns out!  Enjoy!

Gooey S’mores Cookies

1/2 cup (1 stick) butter, softened
1/2 cup sugar
1/4 cup brown sugar
1 egg
1 teaspoon vanilla
1 1/3 cups flour
3/4 cup graham cracker crumbs (7 full graham cracker sheets)
1 teaspoon baking powder
1/2 teaspoon salt
1 cup Mini Hershey’s Kisses (or chocolate chips/chunks)
1 cup Jet Puffed Mallow Bits

Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper and spray with cooking spray. Using a mixer, cream the butter and sugars until light and fluffy, about 3 minutes. Add the egg and vanilla and beat for an additional 2 minutes.

Meanwhile, use a food processor or blender to crush 7 graham cracker sheets into 3/4 cup fine crumbs. In a separate bowl, whisk together the graham cracker crumbs, flour, baking powder, and salt. Slowly add the dry ingredients to the wet ingredients, and mix on low speed until the dough just comes together. Add the chocolate and marshmallows and stir to combine.

Place 1.5 tablespoon sized scoops of dough onto the prepared cookie sheet. Bake at 350 for 10-12 minutes.

Makes 2 dozen cookies.
